/ Yogurt and Onion Potato Salad

INGREDIENTS:

Clean the potatoes; peel and cut into bite size cubes. Steam or boil until tender. Set aside.

In a large bowl, place all the other ingredients and combine. Add the potatoes and toss well. Cover and refrigerate overnight. Return to room temperature before serving and sprinkle with more chopped parsley, if desired.

If consistency is to dry, add more yogurt or a dash of milk, one spoon at a time.

INSTRUCTIONS:

900gr gold potatoes
1 tub Hanini Natural Light Yogurt
2 tbs Mayor Mayonnaise
1 tbs vinegar
1 tbs dijon mustard
3 green onions chopped
2 small red onions sliced
1 tbs chopped fresh parsley
1/2 tsp onion powder
1/2 tsp garlic powder
