INGREDIENTS:
1 rabbit, cleaned
1 can Mayor Red Kidney Beans, drained
1 onion, minced
2 garlic cloves, minced
1 can Mayor Polpa (400g)
1 tbsp Three Hills Kunserva
1 can Mayor Processed Peas, drained (400g)
3 carrots, grated
200g spinach leaves
500g ready-made shortcrust pastry
INSTRUCTIONS:
In a large pot, fry the rabbit in some olive oil until brown in colour. Once cooked, remove from the pot, remove all the bones and chop into smaller pieces. In the same pot, fry the onion and garlic until golden brown. Add the polpa, Kunserva, peas, carrots and the rabbit pieces and bring to a quick boil. Reduce heat and simmer for 30 minutes. Add in the beans and spinach and mix well. Continue cooking for 15 minutes. In the meantime, roll out the pastry and place into a greased baking dish. Spoon the filling in the pastry case and top with the remaining pastry. Glaze with some egg white and put in a preheated oven for 45 minutes. Serve with some fresh salad leaves.
